Rice Creek Landing in Stockton would be perfect for what you've described. It's off of CR 21 just past the Stage Coach Cafe. This is where the Bartram Trail launch point is and there are a ton of small sloughs and creeks just the right size for a Gheenoe.

As blade said you can really go back in time. Most of the area looks just like it did 200 years ago and there are plenty of huge cypress trees that probably haven't changed much since the Indians paddled by them.

Edit - TAKE A GPS AND TRACK YOUR PATH. Cell service is very spotty and as others have said it's very easy to get lost. You would be smart to take a thermocell with extra cartridges and a small prep bag with gear to stay overnight...even if you don't expect to.
