I have never had a deer processed in Alabama and it's too much of an inconvenience to continue doing it in MS now that I live over in Spanish Fort. Anyone got recommendations? I usually get the straps trimmed and wrapped, get some roast trimmed and wrapped, and have the rest ground up and mixed with beef fat.

there was a thread about this a couple of weeks ago. to each his/her own but until carl's is usda approved and begins their processing on site, there ain't no way i'm taking my deer there. they do offer some different items that farm fresh doesn't but i'll just go without or use someone else.

mosley's meat market in mobile will process. i used them once but i highly recommend farm fresh in robertsdale.

they are usda inspected. this will allow them to process hogs if you happen to hunt them and are successful. they make a fantastic italian sausage with venison and will also make german sausage from venison. it isn't on the board but they will make it if you ask them.

we process 6-10 deer every year. they are good people.

also, they make a great smoked linked sausage. i ask them to make it milder than they normally do and they have never had any problem doing so.

if you happen to bring two deer in at the same time and have them pull the roasts for you (we have ours packaged in 2 to 3 pound roasts but they will do whatever you want), have them grind the trimmings with a shoulder clod. it gives the perfect amount of fat if you don't want straight grind. bacon burger is good too but i usually only have the trimmings from one deer processed with it.

Although I'm sure inmates know how to handle someone's "meat", laugh I'm done with carls.
I have used farm fresh in the past and I am using them now. I dropped off a cooler full of meat 2 weeks ago and asked the lady if they are ever going to vacuum seal and she possibly next season.

Never tried Carl's bc we've been so pleased with Farm Fresh! Love that place not only for deer processing, but for their fresh cut meat as well!

I have tried carls but much prefer farm fresh. some complain of the butcher wrap paper they use but I have ground deer in my freezer from last year(used 3lbs today to make chili) and it is still just as red and fresh looking ,smelling as when just done. I have had absolutely no problem with freezer burn. Carls on the other hand smelled rank and was half brown looking when I got it back. Get a few pounds of jalapeno and cheese snack sticks, they are fine.

If inmates handling the meat is your problem, I hope you don't eat at ANY of the seafood restaurants in south Baldwin County. All of them get daily deliveries of work release convicts to work in the kitchen.
