more than likely going to need to replace my water heater in my home. its 20 years old and i believe on its last leg.
thought about going tankless but i need to know if i do can i use the existing plumbing as far as the cold water line that will feed the unit and if i will be able to use cold water on the sinks just as if i had a regular tank heater and not have to replumb anything

The gas vent is more important than the water lines.
All of them have to be maintenanced (back flushed) twice a year if you're in a hard water area.
Once a year if not. Lots of videos on how to do it. That's why they have all the valves on them.
Character is not developed in moments of temptation and trial. That is when it is intended to be used.

If you like long hot showers, whirlpool tub or like near instant hot water then yes absolutely get a tankless water heater
I wouldn’t have anything else
I will say a traditional tank will allow you to have a hot shower when the power is off
