My wife and I had gone out once years ago and her family wanted to see who she was dating so I was invited to dinner. Mother in Law served boiled beef tongue and it looked like a shoe and elf would wear that curled up on the pointed end. I ate the one she put on my plate and it was not bad. Reminded me of sliced bologna that was a little tougher than usual. I think they were trying to get shed of me but I hung around. I have never seen them cook tongue since. Didn't matter anyway-I'm still with her after almost 40 years.

FYI-Souse is better than beef tongue!

We used to smoke em on fridays when I had meat cutting in high school. They were mighty fine as I recall, especially with some fried sweet bread!

Our neighbor that comes eat with us every night that we are at the camp was the same way and had 2nd thoughts about trying it but didn’t want to hurt our feelings. He told me that he trusted me and that he had never had a bad meal at the camp. He tried it and now every trip we make he asks if we’re cooking beef tongue. He words were he never thought it would be good and ended up being one of the best things he ever ate. Beef tongue is a treat for us. It’s very expensive and lots of work to clean but is well worth the money and effort.
