How can they claim that the golf grips absorb the shock of hitting the ground / golf ball but not reduce sensitivity in a fishing rod? I've never used them on a rod so I can't say I dislike them.

To me the grip material isn't really a factor in sensitivity. It's all in the reel seat and most of your highly sensitive rods will have an exposed blank or skeleton reel seat so you can get a finger or 2 directly on the blank.

The Winn Grips come standard on the Hammer rods.
I haven't noticed less sensitivity. The grip is better, especially if your hands are wet.
I really like them.
Bought some of the Winn tape for my Duckett rod. It's not the same as the grips. Not a fan of the tape at all.

I picked up a 13 Fishing "Fate" rod this week, it has the Winn grip. It's just a "do it all" rod for me, and I have to say for $100 it's impressive. Surprisingly sensitive.

Not meaning to give a commercial for 13 rods, just saying that it has the Winn grip and is really sensitive (especially for the price point).

20 some odd years ago Hypalon was introduced to replace cork. The better rods will continue to use cork. Funny they keep finding cheaper replacements, but the prices continue to go up.

Friend of mine in Dothan just built me a rod on an mhx blank with winn grips and while I haven't fished it yet, it feels great. I really like them and you can get a bunch of different textures and colors to customize. First rod I've ever had built and now I get why guys do it. You get what you want in a rod.
