When I was kid, I can remember my mom making Shepards Pie, normally after we had something with hamburger meat in it. So, I decided to make a casserole dish this past weekend and the wife and daughter loved it. Sorry we ate it all before I thought about taking a picture.
Cook diced onions, garlic, mushrooms and sliced carrots in olive oil. Add 2lbs of ground meat and cook until no longer pink.
Add 2 tbsp of tomato paste and bag of english peas, 1/2 cup beef broth and 2 tbsp worstershirer sauce. Simmer 10 minutes
Cook mashed potatoes as usual, drain and set aside. I like to add sour cream and heavy cream to my taters.
Start with a layer of meat, then layer of taters, followed by a layer of white cheddar cheese. Repeat layers and top final layer with cheese. Bake for about 30 minutes at 400 degrees or until cheese is melted and starts to turn brown.

Shepherd's Pie is a favorite at our house...cool thing about it is that the recipe is by no means set in stone...it can be as simple as hamburger meat and mashed potatoes with cheese, or you can add a virtually unlimited combination of veggies to the layers, too!

I eat fairly low carb, so we made it with whipped cauliflower instead of potatoes and it was still awesome.
