I'm sure it taste similar to redfish as they are similar. However, I'm not a big redfish fan and had rather eat specks.

Native Americans ate them all the time. They would smoke them or slow roast them. A lot of archaeologists often confuse drum-fish teeth with human infant tooth caps. I've caught a couple thousand of them I reckon. But I never knew they had teeth. So I googled it. http://www.sciencebuzz.org/museum/object...notus_grunniensIt seems that the teeth are in the throat. That's why I never knew it. As for eating them, I would have to be getting pretty hungry first.

I caught one while bass fishing on a crankbait. Thought it was a big bass! I've only caught them on live bait. Probably eat pretty good

I have fileted small ones 2-3 lbs and throwed in with bass and crappie filets and never had a negative comment. Pretty white meat. Probably like sheephead years ago everyone said they where trash fish and only the blacks would keep them, now they are popular as hell.
