Does anyone know how to remove the mud vein from a carp? I have been told that it is very good meat IF you know how to prep it - ie, remove the mud vein.

If you wanna know how carp taste just go to your local Chinese restaurant. grin I have heard many times that Gar is delicious if you know how to cook it.

When I was in Poland for a few days they had "Carp Wednesday" if I remember right. I think it's considered somewhat of a delicacy. I had it one night and it tasted fine to me. Ive heard that in Polish communities here in the US they will have carp for holidays instead of turkey/ham/beef.

This info does not help answer your question in any way shape or form BTW!

Best way to eat carp. Use a cedar plank on the smoker. Smoke at 200 for about 4hrs basting with honey and lemon. About every 30 min over Apple wood. When its done take it off the smoker let it rest for 10 min. When your ready to eat trash the carp and eat the plank laugh

I have heard Gar is good if you know how, also. And my Dad used to tell of eating carp, and his GM knew how to remove the mud vein. But he didn't know how, and she died before I was old enough to find out...

Also understand that there are a LOT of other BETTER ( I am sure) fish to eat. But also would love to bow hunt carp, and just not sure I can just shoot them and throw them on the bank...

Guess the other option for them would be to use them as fertilizer for green fields! But mostly I am curious, as I said, my dad used to eat them and said they were good. And we ate a LOT of GREAT fish when I was a kid. So if he said they were good, they must be.

I know a few that do eat carp. They say you pressure cook them then either grill or fry them. I tried it once and not a fan

I've heard carp and gar are good, we shoot them but use them as fertilizer in fields after we get em back...wanting to try some though

I have seen the orientals take every gar you pulled up, and get real pissed if you throw them back...

Hear they use a melon ball scoop, make fish balls and deep fry them. And they are supposed to be great. And the scope pushes the bones out of the way and you get only meat.

On carp you filet it & cut out the mud vein between the top & bottom portions. With gar you split it along the back with a hatchet, peel it down about mid-way & cut out the loins, sort of like backstraps if you will. Both need to be soaked in brine before cooking, but it can be pretty good if you're willing to take the time to do it. They take on a good smoke flavor on the grill.

About 40 years ago I had carp and pork-n-beans once for breakfast on Cotaco creek after a hard night of fishing and drinking. I was very hungry but Mr. John Ellenburg knew how to cook it right and it was very tasty. John got up before everybody else and shot a big carp with a 22 in the creek. I'm not sure how he dressed it but he knew what he was doing.
