As for skinning them goes…. My granddaddy made some small gambrels ( Not the one in the picture ) that fit in between a hogs short legs better than a full sized one and then I use a razor knife to cut the skin in 6 or so inch strips from the back legs all the way to the head because the skin doesn’t roll down or pull as good/easy as deer hide does. You can pull the strips down with one hand.
