Bring it overnight in water, salt, brown sugar, couple shots of bourbon and a good bit of black pepper. Smoke with pecan wood. I took the breast meat off the bone before I brined it.

If your kids won't eat gravy you're raising them wrong. I cut mine into steaks and pound them with the meat mallet to tenderize them and then soak in buttermilk, sprinkle Tony Cacheres flour and fry in a skillet like country fried steak. A buddy cuts them in to nuggets and soaks in Crystal hot sauce and fries them and they are delicious.

If you got the time and patience, pluck it and smoke it.. Breast only fried nuggets would be kid frinedly.

Smoke in green egg with some type of rub...Thinly slice it and put in Hawaiian roles with some homemade (or store bought) white bbq sauce...so good that we had them for Easter lunch last year!
