I batter mine in the Zatarain's fish fry batter with a little lemon pepper added in, and then make home made special sauce (mayo, ketchup, Worcestershire, garlic salt , black pepper) for dipping. Ive used it in a court-bouillon too and it ate pretty good I have to come up with new ways to cook it cause im hard on the wild turkeys We Just Know What Works For Us
