We worked most of the day building a fence around the garden area, to at least make an attempt to keep as many critters out as possible. We had a nice breakfast to start the day, but somehow completely forgot about lunch. So once we had the tools put away for the day about 1500, our thoughts went strait to cocktails and food. Earlier in the day we had defrosted some very well marbled Chuck Eye steaks, and had seasoned them with salt, pepper, red pepper flakes, onion powder and garlic powder and left them out to dry and dry marinate. Mrs. Irish put some potatoes in the little oven and went about preparing the veggies and mixing up her baked potato topping. I chilled out and had a Guinness Extra Stout and a couple of shots of rum. Once everything was prepped and the potatoes were about ready, I got the Flat Top fired up and went about my business of getting everything cooked up... 4 minutes on each side for the steaks, after the veggies were almost ready.

Love a chuck eye steak. Kinda hard to find though. There were two reasons I bought these: 1. Folks on Aldeer had recommended them. 2. I saw these and they were on "sale" because I guess most idiots thought there was too much fat in them, but I thought they were perfectly marbled so I jumped on them. I was right. Great steaks and a great buy.

Looks good. But.....you know we need a cut open photo of them steaks to see what the finished inside looks like. Me and Mrs. did Prime Sirloin, baked taters, and spinach salad Sat. nite.
Washed and dried the taters, rubbed with olive oil, coated with coarse salt and laid them open on a piece of tinfoil at 400 degrees for around 2 hours for a crispy finish. Delicious. Thanks man! Isn't it fun to cook and eat good food?
