Got me a grinder and going to try making my deer sausage, what kinda recipes y’all got? What kinda ratio of pork fat to deer meat? Had some one time a guy made with Boston butt that was really good. I’ll also take any tips on fat ratio for burger too. Thanks

I just made 35#s of pork sausage at 80/20 mix. I used bacon ends from Foodland for the 20% fat.


I've spent most of the money I've made in my lifetime on hunting and fishing. The rest I just wasted.....

My wife can't eat store bought sausage because of the msg and all so we grind a bunch up every other year or so. I make it from feral hogs preferably a wet sow. I'll get the recipe for the seasoning we mix later this evening. Its pretty good stuff. Like Fred said 80/20 is a good rate.

Conecuh sells a all Natural Sausage, of course it's Smoked link sausage not ground, but i like it!

According to my father you only need three ingredients. Salt, black pepper, and mustard seed. Though if he had it made with deer it was at least 25 % pork, but he would rather use a 50/50 mixture.

Sage was a deal breaker. As "the waterboys" mom would say, "Sage is the Devil!"

no I buy Leggs seasonings (A. C. Leggs Inc.) #10 pork sausage seasoning. One tablespoon per pound of ground meat. No heartburn.

2+ tbs black pepper
2 tbs sage
1 tbs thyme
2.5 tsp rosemary
5 tsp brown sugar
2.5 +tsp cayenne pepper
