We had some wild caught Alaskan sockeye salmon and it is super easy to cook good and quick. Season it with salt, pepper, lemon and a little oregano. Put some sunflower oil in the cast iron over medium heat. Cook about 2-3 minutes on each side, cooking the flesh side down first and finishing up with the skin side down. Meanwhile Mrs. Irish made a rice pilaf , but not before roasting some fresh beets we picked up at the farmer's market. We scraped them clean and then sliced them thin. Mrs. Irish took some pecans and candied them with brown sugar and butter in a pan. From that she made a salad with spinach, red onions, feta cheese, roasted beets, and the candied pecans served with her homemade vinaigrette dressing... The salad was fantastic, kind of Earthy, but with sweet, pungent and savory flavors. Mrs. Irish knows salads.
