Buckwheat will help build soil and make a low height perimeter, otherwise natural vegetation isn't a terrible thing.

Buckwheat is a good choice. Deer eat it and it's a good honeybee plant if you're in to that sort of thing

One of the prettiest fields I've ever planted. You could hear the honey bees before you even got close enough to see the field
