Meatloaf, spinach and mashed cauliflower with cheese and bacon instead of mashed potatoes...

And honestly I really didn't miss the mashed potatoes.

Meatloaf junkie here also, please share the recipe. Looks delicious. Something about leftover meatloaf sandwich's, I think its always better the next day.

Ha! Still looks good. Nothing wrong with frozen sometimes, seems like I end up throwing fresh items away if I don't cook them quick enough - the bag salads, spinach, etc is the worst. I was curious b/c I've always done the fresh spinach with a quick saute in olive oil, salt, pepper, but I think I like it how yours is there, more cooked down like greens or something. I'm gonna try it.

We like the fresh spinach sauteed in the pan just like you are talking about. One of our favorite vegetables.

1/2 cup of bread crumbs
1 tsp salt
1 tsp pepper
1 tsp garlic powder

Mix well and then form into a loaf.
Bake a 350 for about 1 hour
Take out and add ketchup to the top
Put it back in the oven for about 15 more minutes
Take it out and eat it.
