Mrs. Irish doing the cooking tonight with me helping... Meatloaf, spinach and mashed cauliflower with cheese and bacon instead of mashed potatoes... And honestly I really didn't miss the mashed potatoes.

Still looks good. Nothing wrong with frozen sometimes, seems like I end up throwing fresh items away if I don't cook them quick enough - the bag salads, spinach, etc is the worst. I was curious b/c I've always done the fresh spinach with a quick saute in olive oil, salt, pepper, but I think I like it how yours is there, more cooked down like greens or something. I'm gonna try it.

1.5 pounds of organic grass fed beef 1 onion finely chopped 1/2 a bell pepper finely chopped 1 egg 1/2 cup of bread crumbs 1 tsp salt 1 tsp pepper 1 tsp garlic powder 1 tbsp parsley 2 tsp soy sauce 1 tbsp ketchup Mix well and then form into a loaf. Bake a 350 for about 1 hour Take out and add ketchup to the top Put it back in the oven for about 15 more minutes Take it out and eat it.
