So as I mentioned in the Cabin thread, it's just me at the cabin all weekend, so I still have to eat. Thursday night I made a nice, healthy Chef's Salad with: Ham, Jarlesberg cheese, purple onion, tomato, carrots, Romaine lettuce and a soft boiled egg. Damn it was good... Last night I was invited to a friend's cabin for Raw oysters, grilled Conecuh sausage, and a nice charcuterie tray. I forgot to take pics, but you get the idea... Yes it was damn good. The last two mornings with all the cast iron talk I thought I would just do a one skillet breakfast with one of my trusty vintage skillets: Hashbrowns, ham and fried eggs... And yes that skillet is like a piece of glass on the inside and nothing sticks to it.

Irish how do you get the glassy finish on your cast iron? The one I have is seasoned well but is nowhere near that smooth. I can’t fry eggs in it for sure. That skillet was was brushed with angels wings and passed down to me from an awesome grandmother and an awesome mother. They are both looking down from heaven and watching me cook in it every minute I'm alive. So I have no idea how this skillet got so great other than some great women have cooked in it...
