First I know almost nothing about game cameras, the only one I have was from about 2005. I’m wanting to get 2-3 to try and scout birds on some of my ponds. I figured the best thing for my purpose would be a camera that I could set to just start taking pictures at a certain time at certain intervals like 6:30am every 30 seconds, do game cameras do this? If so what would this feature be called.

Yep. Browning Strike Force. It has regular trail cam mode, video mode, and plot watcher + mode (or something to that effect). It'll take a picture at pre-set intervals. it's great, and that's what you need. I use these cameras that same way. Buy one and you'll figure it out real quick.

Plotwatchers. Not sure which cameras have it but thats what you want.

I've done it before with a plot watcher, but any trail cam with timelapse will work

I dont know about the others but spypoint has timelapse. You can read all the threads on cellcams and see alot of people dont like spypoint. Ive had them for almost two years, when they work theyre ok. I have sent two back in that two years but they sent new cameras and gave me some service for free. You can get a spypoint right now pretty cheap, not sure if the micros have timelapse, I run the link evos.

I started using cams on 2 duck holes this year. Use spartan gocams. They have the ability to use time lapse that you can change whenever needed from the app. I set the trigger to the highest sensitivity setting and it’s surprisingly taking a decent amount of motion triggered pics from ducks using the timber holes. You may be tempted by the SPYPOINT price but you’ll be very disappointing by the inconsistent performance and poor quality pics.

I was not recommending spypoint, just giving my experience. When they work theyre ok, thats it ok.

I’ve been using the spartan gocam 4g version with at&t. Bought 2 for $550 total a month ago.
