This is really a simple chili, but one that is so flavorful and rich...
1.5 pounds venison or ground beef
1 onion chopped
1 bell pepper chopped
a few cloves of garlic chopped
a couple of canned chipolte peppers in adobo sauce chopped
red pepper flakes
2 tbsp of cocoa
big pinch of sugar (balances out the tomatoe's acidity)
1 tbsp cumin
1 tbsp chili powder
1/2 tsp pepper
1/2 tsp salt
1 tbsp oregano
1 can black beans
1 can chili beans
2 cans fire roasted tomatoes or diced tomatoes
1 small can of tomato sauce
1 ear of corn shaved
about 2 cups of beef broth
2 tbsp olive oil
a few pinches of corn meal mix
I brown the meat in olive oil and then add the chopped veggies and season all of that and let it all get happy and then add all the other ingredients and let simmer.
Towards the end I slowly, while stirring, add in the corn meal mix by sprinkling it over the top. This thickens the chili and adds a little more complex corn flavor.
i served it with cornbread of course...
Mrs. Willene was a happy houseguest...
We like a nice crispy crust on our cornbread around here...
