Fixed a pot of it today. Cheated a little with a bag and a half of diced potatoes,can of cream of celery soup,grated a small yellow onion,stick and a half of butter and 3 cups of milk. Soup was some count.

This one is pretty good.
8-10 small red potatoes peeled and diced. Boil in 3cans of chicken broth until tender Add 2 cans of cream of onion 2 cans of cream celery 1 pint of half and half 4-6 Oz of pepper jack cheese
Bring back to a light boil while stirring constantly to avoid scorching until soup is smooth and cheese and cream is incorporated. Salt and pepper to taste.

I made a big pot of tater soup last night as well. My recipe is bit different as I prefer to avoid anything from a can but it all sounds good.
5lb red potatoes peeled and diced. 4 cups of chicken stock 1 stick of butter and 8 tbsp all purpose flour 1 sweet onion diced 1 bag of celery hearts diced 1 shallot diced 5 garlic cloves diced 1/2 quart of heavy cream 2 cups whole milk 1 tbsp salt and pepper 2 packages of kentucky ham cubes 1 bag frozen sweet corn
Topping: chives chopped 1 lbs bacon chopped Gouda and Vermont cheddar cheese shredded

We do an Italian sausage, potato and kale soup. Zuppa Toscana. That is our favorite go to potato soup. It's our own copy cat recipe from the one at Olive Garden.
I found the thread for the last time we made it complete with recipe...
