Dingle Johnson Joined: Dec 2013 Posts: 22,665 Lickskillet, AL	We are going over to some friend's cabin this afternoon to hang out, have a few beers, watch some football and eat some good food. Since I was going to smoke today, I volunteered to bring the brisket. I did something a little different this time... I took some of the fat trimmings and bundled them into some foil packets, poked holes in the packets where the fat would render, i placed them on the upper rack in the kamado so the fat would drip on the briskets and baste them in their won fat trimmings. So far it appears to be working good. These have been smoking since about 0800 this morning.
