Tried my first long cook sunday afternoon. Took these three small roasts and covered them with a rub of brown sugar, garlic powder, onion powder, black pepper, salt, and montreal steak seasoning and let them sit in the fridge overnight. Got up Sunday morning and injected them with a mix of the leftover rub and good dark beer, then wrapped them in bacon and put them on the pellet grill at 160 until they hit 145 internal temp. Man were they good. Probably the most tender and juicy deer roast I've ever done. The picture of the sliced meat is after everyone ate it all up at dinner. Luckily they saved me enough to make a few sandwiches this week.

Well done. Smoked whole deer roasts are something special.

I made a sandwich with it for lunch yesterday with mayo and spicy brown mustard. Talking about some good leftovers. I need to start doing one of these a week just for sandwich meat.

Also I will add that the saying I've heard about how overcooking game is the worst thing you can do to it is 100% true. I'll never let a piece of deer meat go above 145 again.

Agreed Coosa. You shouldn’t be eating venison if you don’t like mid rare doneness.

The only meat that should be cooked medium rare is bacon. I’ll take the rest of mine cooked to medium. I’ve never had an issue with it not being tender and delicious.

How long did it take to get to temp?

A lot quicker than I expected it to but it was hot as all get out that day so my grill was running hotter than I wanted it to. I think all in all I had them on there for about 3.5 hours.

I followed Coosa's lead and did one last night. I took it off at 125. Dang, that thing was good.
