My chufa made a decent crop but there are a ton of weeds in them. Question is, at this point in the year have they pretty much made all they're gonna make and would it be a good or bad idea to bushogg them. There is 6 or 8 feet tall Johnson grass on half the field. My thought is to throw and mow for an extra bow hunting spot

When did you plant them, how big is the plot, are the turkeys already using the plot?

Chufas have about a 100 day maturity so they might still be doing some growing. I'd wait until about mid Oct to bush hog and then spray if necessary to give the turkeys access to the chufas. We spray our chufa plots with clethodim and milestone 3 or 4 weeks after the C hufas come up. If we don't spray, the morning glory, pigweed and other weeds take over and suppress the chufas growth.
If you have many turkeys, it won't take them long to work over a half acre

I sprayed but apparently didn't do it right cause the weeds, morning Glory and Johnson grass all looked like they were heavily fertilized
