I'm about out of deer burger. Kroger has beef briskets on sale for $1.99 per pound. I've always heard a brisket makes a good burger and that's cheap for one now days. I picked up a 13.5 pounder and ran it through the large plate. Ended up with 10 packs weighing 1-1.25 pounds each. Saved 2 pounds for supper last night. I'd like to have a medium plate as my grinder only came with a large and small. But the large grind made a hell of a tender burger. I just lightly patted them out and seasoned with kosher salt and fresh ground black pepper. I don't know that I've had a better tasting burger anywhere. I didn't get a picture of the finished product, we dove straight in when they were done.

Snakebit, that's just the brisket, no trimming and no beef fat.

I agree. Any guess as to how much fat is in a brisket? Does the ground brisket have enough fat in it to grill the patties? One thing you may want to try with the meat is to double grind it. I like the texture of the burger better when I run it through the grinder twice.

Looks great and dang good idea

I didn't trim any of the fat cap off when I cut it up to grind. It had plenty of fat, but that brisket fat is different than fat in regular burger. I was worried it wouldn't render. I loosely patted the burgers out for supper that night. When I grilled them, I let them crust over before I turned them. They held together yet they were really tender when you bit into them. They didn't shrink much either. I did double grind part of it. I just got lazy on the second half when I did it. LOL. After these packs are gone, I'll definitely keep an eye out for them when they go on sale again.

I can not explain how pissed I am knowing I missed that sale....brisket burgers are fine vittles...and it'd be nice at that price to freeze some to smoke later .
