seven hours and 205 internal temp, felll off the bone. Daumnitman, that is good eating.

What temperature you use for 7 hours? Thanks! damnifinIknow, my temp gauge broke on my charcoal grill/smoker. Prolly around 200/225. I just keep it burning and check meat temp. I wrap it in foil at 180, pull it at 200. Today it was 205 at pulling, shredded it with two forks.

If you are pressed for time do 350 degrees for 45 mins per pound. Should be 201-202 when done no wrapping required. It’s called turbo butt. That’s what I have been doing lately and you can’t tell a difference at all.

I just did one like this b/c I got it on later in the morning than I wanted...and, I couldn't tell a difference, In fact, I think I liked it better, had a much better bark on it.

I cook mine unwrapped for the first 5 hours er so, then wrap and cook another 1.5 hours. The butt usually jumps 10-20 degrees in heat with the foil. Seems a lot of difference in 180 and 200 on how tender they are.

Seems a lot of difference in 180 and 200 on how tender they are. i do this too when it's clear the butt has hit the "stall" ... wrap, bump up grill temps, power thru the stall -- unwrap to get the bark back right again & pull off when IT hits 205

I cooked a butt in the oven sunday. 350 degrees for 4.5 hours and turned out great. seasoned with garlic, black pepper, dry Italian seasoning, sea salt., jar of peppers, one can of beef broth.
