Looks fine. Last ones I had were in Boston. I have to pay around $25 a lb here for them. It ain't cheap here either. But flounder rolls are pretty good.

I steamed two whole live lobsters with 1/4 cup of Creole seasoning in the water for about 5 minutes until they turn red, dont overcook them. With the lobsters I have been getting at Publix it yields just under ONE pound of meat which is plenty for two big rolls.
Then pick ALL the meat out leaving the pinchers whole and chop up the rest in 1/2" pieces.
The sauce is simple.
1/3 cup Hellmans mayonaisse 2 tsp fresh lemon juice 1/3 cup diced celery 2 tsp chives finely chopped 1 tsp fresh chopped parsley 1 tsp fresh chopped taragon 1/4 tsp salt 1/4 tsp cayenne pepper or cajun seasoning
Fold the chopped lobster into sauce and refrigerate at least an hour.
Serve on toasted hoagie roll, I prefer the wheat rolls from Publix, with shredded lettuce. I also like to drizzle some drawn lemon butter over the roll before eating.

I had two lobsters and ended up with 15.4oz of meat from the two. I think they weighed about 1.5lbs in the shell. But last night, I went to Costco and decided to try the Langostino and quiet honestly, it wasn't as good but it was mighty tasty and cost less than half the price of the lobsters and I didn't have to clean anything.
