I have no doubt the quality of knife you make is outstanding. But I do have a question because I know nothing about blades. Which one of these would you suggest for an "every day" knife? Basically looking for a blade that stays sharp and easy to re-sharpen if necessary. Also looking at #4 for a kitchen knife... Good stuff as always! I think smaller knives are better for every day carry. Probably a stainless for ease of up keep. #4 is a little on the thicker side at 3/16" thick.

Only problem I have with is that it’s too damn nice to filet anything with.
