smoked out 2 racks of baby back ribs yesterday in my Weber kettle + SNS; due to time constraints on my day, i really needed to nail down the session to 4 hrs so i idled the grill at 270 deg pretty much the whole time, and they came out damn near perfect ... it is so interesting about cuts of meat -- the longer rack was MUCH juicier/tender, and was the one closest to the charcoal basket ... the smaller one was further back, and although it was good, it wasn't as tender ... nevertheless, we laid waste to 'em quite well! LOL

I smoke ribs exclusively in my Weber 21" Kettle. It's a cooking machine once you get your method down.

3,2,1 is the best way to mi. I've won many cook off doing it this way. We love spare ribs, country style and beef short. Heck we love all of them. Lol

Need to get ribs internal temp to 180 degree's for them to turn loose of the bone. Those look damn good!

I like to just rub my ribs down and throw them on the smoker at 225 for 6 hours. Every time I've tried the 3-2-1 method, the ribs are falling apart when I try to get them out of the foil to do the last hour, couldn't hardly keep them together. Don't get me wrong, they were still delicious, just falling apart too much for me.

We live in an apartment right now and don't have a grill or smoker so I cook mine in the sous vide and then finish in the oven and man they are good.

My version of the 3, 2, 1 is 3 ours of smoke wrapped in foil, 2 hours with the foil peeled back on top, 1 hour wrapped back up in foil. If I want to sauce my ribs I put it in before I wrap it up for the last hour. They may be talking about something else though. ?

I cook ribs at 300 degrees and shorten the time. I will go 2 hours then 1 hour wrapped and finish with a little sauce for about 20 min. Ribs are tender but not fall apart.
BGD those look awesome. I love a little char on ribs having grown up in ttown.

They rolling in a Brinkman. Wrapped them a bit ago. They will get at least 16 hours total before I pull them.

Man, when I want ribs, I want'em now! 22 mins in an instant pot, then 10 on a grill to glaze the sauce and I'm ready to eat. They are fall off the bone tender too.

That ain't right Larry................They need the silver skin pulled off before the cook, rubed 24 hours out. Spritzed with BBQ Sauce and apple juice during. Not fall off the bone. Have a bite mark when you bite them and very little tough when you do bit.. That's competition style which is what I do. Never lost a cook. But never been in that many.

I played with several things on the Primo. I prefer 325 and 2-2-1 works well. The middle 2 in the foil is where they can start falling apart and will sometimes do less in foil and then a little longer out. Dry rub only for mine.

1.5-2 hrs max on my ribs. I cut baby back slab in half so it fits in a gas grill easier. Cook with smoke and indirect heat at 275-300 and check internal temp at about 1.5 hrs 190-200° is perfect. Add sauce and wrap for 15-30 minutes then remove and enjoy

These are better than any rib I have ever had. If someone can make some better I would love to eat one but these on propane and propane accessories are dang fine tonigt!
