Bhut jolokia, sparingly. I grow jalapeño, Serrano and golden cayenne for cooking with. Also do hot banana peppers for tossing in salads and what not.

Hatch Green Chilies are about as hot as Jalepenos, maybe a little hotter, and that is about as hot as I want. I do like my Thai food to have some Thai hot chilies in it, but not too much.

I paid a boy who was working for me $20 to eat a ghost pepper I grew last year. He took it pretty well at first. Three hours later he was curled up on the couch in the fetal position drinking maylox. I called to check on him, he said he would gladly give me $50 to take the pepper back. Good fun. I dont fool with hot stuff, I cant handle it. Im growing some carolina reapers this year.

As far as eating the pepper itself, a jalapeno is about as hot as I care for. I do like to cook with some hotter peppers though

I rarely eat them by themselves. I like jalapenos and Habaneros in recipes and wing sauces.

I like a little kick in my Thai and Indian food, but not enough to ruin the flavors. I'd love to go to New Mexico for the Hatch harvest.

My wife last year was in Pennsylvania at a home dinner with some friends with Thai background and they made some Thai dishes. She thought the Thai chiles were cut-up sauteed green beans, like what you get at the Chinese buffet sometimes. Said they looked like them. I don't remember if she ate one or two, but she thought she was going to D-I-E die. Crying, snot dribbling, couldn't breathe for a minute or two. We laughed about it later but she said it was brutal.

The daughter and I had been eating hot sauces of various kinds for awhile, increasing the heat. All fun and games. Cutting up about who could take it. We got some ghost pepper sauce on some wings at a restaurant. I barely made it home. I stick to jalepenos and Tabasco now. That ghost sauce was a wrecking ball.

I’ve eaten chicken wings that were at 1.2 million scovilles and I’ll never do anything that stupid again. It’s just not enjoyable to go over jalapeños.... I’m not even talking about how spicy it is but the fact that it has to exit somehow. I’ve got the hottest hot sauce in the world, it’s right at 1.4 million scovilles. Just touching your tongue to the lid causes pain for hours.

I love hot peppers. That said, I still love to be able to taste my food, so there has to be a balance between the burn and the flavor. I keep some Carolina Reaper sauce, some habanero and a few other varieties with Jalapeno, Serrano, Ghost and whatever else. The idea is to use the really hot stuff sparingly to enhance flavor, not to overrule the flavor of the Fajita's, Chili, Jerky or even the Spagetti. I can and have poured Reaper sauce in my mouth just like anybody else can. That doesn't make it pleasant or fun to do. A few drops of Endorphin Rush, Dave's Insanity or 357 Magnum will work in a bowl of Chili. A teaspoon full will surely ruin it for anybody.

Some people just tolerate it better than others. I'm one of the guys that can tolerate the heat and normally I like my food as spicy as possible. I've eaten a ghost pepper and I've made snacks and cooked with ghost pepper as well. I mean don't get me wrong those damn things are hot but I'm not the rolling around on the ground screaming and chugging milk while it's running out of my nose guy. Under normal circumstances (if I'm cooking for just me), I've been known to use habaneros, and red chilis in my food. I eat hot sauce like it's going out of style and sometimes make up my own concoctions by mixing and adding garlic. I recently made up a big batch of Zatarains Cajun pureed with about 10 cloves of garlic that is out of this world on fried chicken. It's not really hot much at all but man it's good. Next time you go to a good Mexican place have them bring you their house hot sauce. If they done it up right it kind of looks like a bowl of thin grits that are crimson red (like the color of blood). Not all of them have that but man when you find one that does it's awesome.
