Get a digital remote so you can stick the probe in and never open the lid until it is finished. "If you're lookin ya ain't cooking"

Usually lowes, academy, and home depot have a good selection.
I'm sure Walmart has them too.

As stated my spatchcock chicken was good but one thing I like is my bbbq to fall off bone it did not. Got done but had to remove from fire too soon..
I am learning on my egg an had my temp maintained at 400 -420 degrees. Should I back down my temp an if so to what range

I don't think I've had a spatchcock chicken that really was falling off the bone. They pull apart very easy. What I like about the chicken is that it is always very juicy and flavorful. I tried to cook the same style on a gas grill a while back and it was nowhere near the same. You can slow cook a chicken on a ceramic and it will fall apart but for a good meal that is less time consuming that spatchcock is the way to go.

I just threw one on. Got some lemon pepper rub on it and put me a bit of butter under the skin on each breast. Another 30 minutes or so and it should be ready.
