I got my digital at academy for about 20 bucks and it is a good investment. The pager will go off inside the house when it hits the desired temp.

As stated my spatchcock chicken was good but one thing I like is my bbbq to fall off bone it did not. Got done but had to remove from fire too soon..

I am learning on my egg an had my temp maintained at 400 -420 degrees. Should I back down my temp an if so to what range

I don't think I've had a spatchcock chicken that really was falling off the bone. They pull apart very easy. What I like about the chicken is that it is always very juicy and flavorful. I tried to cook the same style on a gas grill a while back and it was nowhere near the same. You can slow cook a chicken on a ceramic and it will fall apart but for a good meal that is less time consuming that spatchcock is the way to go.

Thanks Dustin for the advice. I was hoping you would chime in as you are an egg master. That makes me feel better..--actually it was really good but like you said a little tighter..... lowering the tip I agree an will try bout 350-375 .... it truly is so easy

I just threw one on. Got some lemon pepper rub on it and put me a bit of butter under the skin on each breast. Another 30 minutes or so and it should be ready.
