I got a Sous vide cooker for Christmas, and today was the first time I had a chance to try it out. Decided to make some carnitas, so put them in last night. The towel is to hold the vacuum sealed package down under the water. They cooked for 24 hours at 165 degrees.

This was when they came out of the package and were shredded. It came out falling apart.

If you figure out how to make something better than you can on a grill or smoker, let me know. I have been very unimpressed by the sous vide method. I tried mine about a half a dozen times and stuck it in the pantry. Havent looked for it since.

I honestly think it's an interesting concept and I know a LOT of really high end restaurants use them to good effect, but I just don't think it's for me and the way I like to cook. Hell we don't even use a microwave. The only time I use a microwave is to heat up my lunch at the office. I even have my own ceramic plate that I keep in my office to put all may food on before I heat it up in the microwave. Why? Because I won't heat anything up in plastic.

My mom gave us one of those fancy computerized pressure cookers and it's still in the box in the storage room. Her brother and sister in law were gushing at Thanksgiving about this air fryer thing they got and how much they love it and they "knew we loved to cook and wanted to get us one..." We looked at them like they had horns growing out of their heads.

I guess I'm more of a cast iron skillet kind of cook. Our old Crock pot is about as high tech as we get in the kitchen and we mainly use that so we can put something on in the morning before we leave for work and it's ready when we get home. That said... There's a lot of stuff that I don't like the way the crock pot cooks it. For instance I would much rather braise a chuck roast in the oven than cook it in a crock pot and pulled pork is much better coming off the Kamado than the crock pot. Stuff comes out of the crock pot too stringy.

All that said those tacos look good. I do pretty much the same thing, but use the Crock pot instead. I see that you toast the tortillas just like I do. I can't stand to go to "restaurants" and they serve you fish tacos, street tacos, etc... on what I consider "raw" tortillas. I like them lightly toasted with a little oil on a flat top or cast iron skillet.
