Cook some bacon and sauté a little yellow onion in with it. Crumble the bacon into the cleaned out bell pepper, and drop in the onion. Add some shredded cheddar cheese, a little garlic seasoning. Then crack an egg on there and bake it at about 400 for around 20 mins until the egg or pepper is cooked to your satisfaction. Top with a little smoked paprika for color. I haven’t tried it yet but I bet some sautéed mushrooms in there would be good and I bet a little sausage could be added or substituted for the bacon. Garnish with some Parsley if you want to make it pretty

One was perfect the other the yoke had set. I used the toaster oven. Next time I think I'll microwave the prepped peppers a couple minutes before stuffing them and use the regular oven. And add mushrooms as well. Gonna do them again later this week.

I’m thinking about putting chorizo and pickled jalapeños in the next batch. Maybe hit it with some carne Asada seasoning. Another variation could be some left over Christmas ham for the meat.

I have apparently made a huge mistake somehow....

I decided I'd try cooking one of these things this afternoon. Now I do not like runny eggs so I knew it would take longer to cook, but I've had mine in the oven for 90 minutes and the egg is still watery. I mean like I just scrambled them up in a bowl. I thought it was done as the top looked done but I stuck a fork down into the top and the egg was only set about 1/2" deep. Still in the oven.

One upside, that pepper oughta be done. LOL

I used a whole pepper with 2 eggs, some, onions, ham chunks and cheese.

I did that too, but didn’t cook for 90 minutes. Did 20, then cut it up and egg was still watery(liquid whites(i also used two eggs)). Zapped it in micro to finish it up

Mine were like over medium. A little runny yellow and hard white. I think using 2 eggs in one pepper could have caused your issue.
