If you are concerned about deer only , I'd say oats . If it's deer and turkeys I'd go with clover.

I wouldn't plant just one thing, but to answer your question, for just deer probably radish due to the tonnage per acre. Deer can eat leaves and bulbs. Deer and turkey, clover.
