I can't find the place I was reading it now so here is my question. What seating die do I use. Is there a better die for these or am I over thinking it? I'm not finding load data for 270WSM with these either. Is it in the newer Hornady book? 143gr.

Your over thinking, I used a rcbs with no issues.

If I agreed with you, we'd both be wrong.

I know that Hornady offers a seating stem for their dies that matches the ogive of the ELD-X

Many dies these days have seating stems which work with the longer Ogive of VLD bullets. Pull the seating stem out of the die and see if the point bottoms out before it engages the jacket of the bullet. If it doesn't bottom out, you're good. Without a current guide, use load data for Hornady140 gr bullets and you should be good.
