Inside the enchilada is: 3 medium or 2 large chicken breasts, boiled and then shredded. 1 cup black beans 1 4oz can diced green chiles 3/4 cup shredded cheese of your choice (just get an 8oz bag you’ll need the rest) ~1/3 of a jar of salsa verde 1tbsp (salt, pepper, garlic powder, Chile powder, paprika, cumin)
You could probably skip the seasonings listed above and just use a pack of taco or fajita seasoning if you wanted.
Mix all that together and then stuff medium sized tortillas and roll them up. Place all those in a large casserole dish, and the pour over the rest of the jar of salsa verde and top with the rest of the shredded cheese. Bake at 400 for about 20- 25 minutes. We topped ours with queso fresco and sour cream. They make great leftovers at work too.

yup, Sat nite I made the IG's recipe & used verdes sauce (for my new GF) ... she destroyed 'em!!! LOL yours look very nice
