I seasoned the chops with brown sugar, onion powder, garlic powder, paprika, salt and pepper and put them in a bag with olive oil and apple cider vinegar and shook them all up good, before searing them in a hot cast iron skillet for 2 minutes each side before throwing the whole thing in a 400 degree oven for about 8 minutes. I also cut some fresh corn off the cob and pan sautéed it in about a half a stick of real butter with salt and pepper, meanwhile Mrs. Irish braised some fresh collard greens with bacon, bacon fat, chicken stock, white wine and seasonings and some brown sugar.

Those greens look awesome. Just need a big piece of cornbread next to it.
(Actually it all looks good but I am a sucker for greens).

(Actually it all looks good but I am a sucker for greens). Thanks fellers. I'm actually down below 200# and trying to stay there. However as you might know, it is a struggle as we get older. We are trying to lay off bread as much as possible. (Beer is my bread right now. ) I haven't been working out much lately. I've been travelling a lot for work. Thank goodness for all the good, old, hard fashioned, work at the cabin on the weekends to keep the pounds of of us. Cooking together every night that I'm home keeps us from watching TV and on our feet doing something. Then by the time the whole family chips in and cleans up it's time to go to bed. It's a win/win. I don't have to subject myself to the crap in the media and I get good food. Stay tuned for tonight: Carne Asada and Southwest salads...
