Since yesterday was my Friday I decided to invite my Dad over and grill out some chicken (Like I need an excuse to drink and grill out.) I took off early, because I already had all my hours in by lunch. I went to Sam's club and bought just about all their marked down steaks, Old steaks = Good steaks

Mrs. Irish had already marinated some chicken breast that morning and so I set about making some salads for us all and to have something to sip on I decided to poke my head in the fridge and the liquor cabinet and see what I could come up with. Let me tell you something, there is no new mixed drink under the sun. you might think you have just invented something and then plug those ingredients into Google and sure enough some Jackass in New York or LA has already made that drink.

I call this the "Southern Cross."

Put some ice in a short glass and add:

Squeeze of a lime wedge
4 dashes of Angostura bitters
1.5 oz of Cruzan Dark Rum (I used 80, but the 151 would probably kick this thing up a notch or two.)
Fill the rest of the glass with Buffalo Rock Ginger Ale
Stir

It's kind of like Alabama meets the Caribbean, hence the name. And it's a nice refreshing summer drink. It almost has a cola like taste up front, then you get the Rum and lime and then it finishes off with the heat from the ginger ale making you want to take another sip.

After a couple of those, I pulled the chicken off the Kamado...

Nice. Other than the bitters, that's called a dark and stormy. It's a dang good drink.

The dark and stormy uses ginger beer and lime bitters in addition to the lime juice and the rum. So yes... similar but different enough to call it something different and why I mentioned that there is hardly ever a new drink invented.

I do love a dark and stormy, dark rum and buffalo rock ginger beer, one of the best mixed drinks ever made!!!

A good way to add a little something extra to your rice is to use the zest of a lemon in the water and add chopped fresh parsley and butter after cooking. Goes great with Greek chicken.
