We were going to grill chicken and have a caprese last night, but I got a hankerin' for beef. So I stopped by Trader Joe's on the way home and picked up a flank steak. I scored it on both sides, then doused it in sunflower oil and the juice from a half a lime and then I sprinkled it with salt, pepper, garlic powder, and chili powder before letting it rest while Mrs. Irish made some salads. I watched while having a beer and a shot of 100% agave Tequila. Mrs. Irish always makes the best salads. These had Romaine, cucumbers, tomatoes, black beans, fresh sauteed corn off the cob, purple onions and you can see her cutting up the avocado about to go on there as well: When she was done with the salads, I threw the steak on the very hot skillet with some avocado oil in there and proceeded to sear it for about 3 minutes on each side. When that was done, I set it on a cutting board to rest for a few minutes before slicing it across the grain: We served it with a little yellow rice on the side...

Irish, I have watched your posts for years. I can cook (almost but not quite) as good as you. I am also building in North Alabama, not real far from where you are building. I’m in Mentone and you are in Cherokee County best I remember? Maybe you can show me how to make those good pics one day.... Hahaha.... I just hold the camera close and try to get a good angle and composition. You're over near Park Place and Boardwalk over there in Mentone. That's the hoiti-toiti side of the mountain. We've over here in Cherokee with all the Rednecks, Methheads and folks on disability. We love them all though (Except the methheads) and have made some great friends on our side of the mountain. Hopefully we will be moving up there full time in about 8 years. God willing.
