We were going to grill chicken and have a caprese last night, but I got a hankerin' for beef. So I stopped by Trader Joe's on the way home and picked up a flank steak.
I scored it on both sides, then doused it in sunflower oil and the juice from a half a lime and then I sprinkled it with salt, pepper, garlic powder, and chili powder before letting it rest while Mrs. Irish made some salads. I watched while having a beer and a shot of 100% agave Tequila.
Mrs. Irish always makes the best salads. These had Romaine, cucumbers, tomatoes, black beans, fresh sauteed corn off the cob, purple onions and you can see her cutting up the avocado about to go on there as well:
When she was done with the salads, I threw the steak on the very hot skillet with some avocado oil in there and proceeded to sear it for about 3 minutes on each side.
When that was done, I set it on a cutting board to rest for a few minutes before slicing it across the grain:
We served it with a little yellow rice on the side...
