I had the luxury of being home most of the week last week, but back on the road today and for the next few days. So we got to do a little home cooking:
Always one of our favorites around the house. Grilled chicken Caesar Salads with Mrs. Irish's homemade Caesar dressing and my homemade croutons:
Mrs. Irish picked up a couple of rotisserie chickens for her Momma and she got us one too. So the first night I took the breast and chopped them up and made a one skillet, Chicken, rice, broccoli and cheese dish while Mrs. Irish made a marinated tomato, onion and cucumber salad. Dad came over for dinner and really enjoyed it all.
The next night I took the rest of the chicken and put it in a pot to boil and make a nice broth. Then I pulled the chicken out and took all the good parts off, chopped them up and made some of my homemade Mexican Chicken Soup:
Friday night we spent the night at our friends Skip and Bettina's place and we always like to cook with them. Friday night it was bratwurst, peppers and onions served on potato rolls with Mrs. Irish's homemade olive oil fries:
Saturday night was cast iron skillet Fillet night. Skip and Mrs. Irish did all the cooking. Mrs. Irish baked the sweet potatoes, made a creamed butter, brown sugar and cinnamon topping, made a nice salad and Skip did a mighty fine job on the steaks:
