Dingle Johnson Joined: Dec 2013 Posts: 22,687 Lickskillet, AL	We still made some nice tacos barbacoa Monday night with a slow cooked sirloin tip roast, seasonings, and fresh pico de gallo... The next night I was in Panama City, Florida on business and ate at a little place called the Saltwater Grill and had a nice Cajun Redfish... The pool bar where I was staying actually had a nice burger complete with homemade chips, once I gave them direction on how I wanted everything cooked... Then yesterday at lunch in Moss Point, Mississippi I had lunch at my favorite Mexican Restaurant in Moss Point (Is there another one? ) and I had their wonderful chicken fajitas... (Their carne asada is fantastic.) Anyway... on to the lamb chops we are cooking tonight to ride out the storms...

However the Carne Asada they serve there is actually really quite good. They serve it with a roasted jalapeno and a couple of whole small onions that are both great. Some nice seasoned rice and what could best be described as some cowboy beans in a little crock. The steak itself is served on a bed of caramelized onions.
