Some recent meals in the last few days: This was a surprisingly good little Mexican restaurant near the hotel where I was staying in Pensacola earlier this week. Tacos Barbacoa, Carnitas and Shrimp with a black bean soup and all the trimmings. Chased down with a Negra Modello. Mighty tasty... Dad came over Tuesday night to have a drink and some dinner with us. He really misses Mom, so it's good to have him over a few times a week. So we fired up the grill and made some grilled chicken on the Kamado with some of Mrs. Irish's awesome marinade served with her homemade potato salad and some steamed broccoli with butter. I like the boneless thighs: The next night she took the grilled breasts and made some of her homemade Caesar dressing and I took some pumpernickel bread and made homemade croutons for a nice Caesar chicken salad. I chased it down with a little organic vodka on the rocks. It's like a martini but without all the vermouth and olives. Last night I was kind of late coming back from Georgia and she made some Thai Red Curry Chicken served over rice. That organic vodka was so good the other night I decided to have another glass. The tasty dinner was carefully eaten with a couple of pairs of 80 some odd year old lacquered chop stix. Good stuff right here folks.

Boneless chicken thighs are the Ribeyes of the chicken. Seriously. Pretty much all we buy anymore...
