Since Jan I’ve been 99% gluten free. Eliminating gluten has really helped me with joint inflammation in my knees and especially my hips. I can move pretty much pain free now. I eat a lot of oats, cornmeal and rice noodles which are good, but I need some different ways to prepare those.
Those of you who are like me, what gluten-free recipes do you have to share?

Have tried some gluten-free items that were horrible (pastries, mostly; horrible) and others that I didn't know were gluten-free until someone told me (bread, pizza crust, pasta).

Also have considered trying this for a while to see if it helps in any way. We don't eat a lot of bread and rice, though, but I know it's more than that.

Rice is actually gluten free I believe.

Yes, rice is gluten free. Gluten comes from wheat. However, buckwheat does NOT have gluten.
Today’s commercial wheat is not even close to what a lot of us , and especially our parents ate, when we were kids. Through decades of genetic modification of wheat, to produce massive quantities at lower prices, the wheat used in most commercial foods is a fraction of what it was, genetically, generations ago. That’s why there’s so many packaged foods with NON GMO PROJECT stamped on them.
This project is apparently in response to the increase of gluten which occurred as genetic modification continued.
To be clear, NON GMO PROJECT foods are not gluten-free. They are merely a more pure version of the original wheat as opposed to heavily modified wheat. They do have gluten.
To be certified as gluten free, processed foods must be marked as such in the packaging.

While oats do not contain gluten, they are rarely marked gluten free because that are often processed in factories that also process wheat and there is the possibility of cross-contamination.

If I’ve stated things that aren’t factual, please correct them. I’m no expert but I have done a lot of reading on the subject and have a friend who knows much more than I do.

1 1/4 cups fine ground corn meal
2 1/2 cups water
1/2 tspn salt

Set 1 1/2 cups of the water to boil. Mix the cornmeal and salt with the other cup of cold water. When it's mixed into a slurry, stir it into the boiling water.
Boil for 7 or 8 minutes, until mixture begins to thicken, then remove from heat.
Serve with some brown sugar or honey mixed in as a hot cereal, similar to Cream of Wheat.

Pour leftovers into a loaf pan and put it in the fridge...it'll gel overnight.
Next morning, slice into 3/8" thick slices, flour and fry...a whole different meal out of the exact same thing!...it's good, and good for you, and filling.

Edit: Oops..."flour and fry" does not equal gluten free....dredge in corn meal and fry! smile

No celiac disease here. But for two years my joint inflammation has gradually increased. Hips especially were bad and knees not far behind. I have psoriasis, which is an auto-immune disease. Runs in the men in my family. My best friend has a daughter with Junior Rhumatoid Arthritis, also an auto-immune disease. She has a very bad case of it and after talking to her doctors they determined that gluten has a profound effect on the body's response to the auto-immune deficiencies when it flares up. There's a connection to white cell production in the joints, somehow. That's how I learned that auto-immune/white cells/inflammation could be related.

It took years for me to cut sugar from my coffee. But now its like syrup if I add it. Its really a matter of training my taste buds to accept less sugar and eventually eliminate it. For the first 3-5 days of no bread I thought I was going to loose my mind but 2 months later its gotten to where it just doesn't bother me to go without it so now I only eat cornbread or rice flour.

My daughter has celiac caused from Lyme's disease. She has been gluten free for about 10 years now and we have learned how to cook almost everything gluten free. We buy gluten free oats and grind them in a cheap coffee grinder. This makes a great flour to batter fish, cube steak, etc.. You can even make good muffins and banana bread with it.

I have celiacs disease and had or have Lyme's disease. No Dr has ever told me there was a correlation. My celiacs came on about a year after my Lyme's. How about that.

Never heard of that Kris however there is an allergy to red meats that you can acquire after being bitten by a tick. Its called alpha- gal.

It's not really celiac disease that you get with Lyme, but it mimics celiac and all the intestinal absorption problems that go with it. Gluten affects the same as any celiac patient.
