I know this is going to come as a shock to y'all, but one of my favorite things to do is to come home, crack open a cold beer (or pour a nice wine or adult beverage) and make something good to eat from scratch. It's like immediate gratification.

Tonight on the menu is one of our family favorites: TACO PIE!

Done in the one cast iron skillet method

1 pound or so of ground beef (or venison or buffalo or elk)
1 onion chopped
1 bell pepper chopped
1 or 2 big ass jalapeno peppers chopped
1 big ass hand full of frozen corn
1 tbsp minced garlic
1 tbsp Cumin
1 tbsp Chili powder
1 tbsp Oregano
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp red pepper flakes


Brown the ground beef in olive oil and mash it up with a potato masher to get it nice a fine.

Add the rest of the above ingredients and let all that simmer for a while until all the flavors are married and the veggies are tender and nice. The kitchen should smell like a mexican Fiesta in there about now.

Next cover the thing with some shredded cheddar in this case we had some really sharp cheddar from New Zealand.

And then mix up:

1 cup cornmeal mix ( I use Martha White like a rented mule)
1 egg
Some spoiled milk
Some peanut oil

You want this to be kind of runny so you can drizzle it over the cheese and stuff to make a nice crust. you don't want this to be too cake like.

I guess I forgot to tell you guys to preheat your oven to 400 degrees.

Stick it in. (That's what she said.)

Ask Alexa to set a timer for 20 minutes and have another beer and a shot of 100% agave tequila!

Hell... It was good. I'm having it for lunch again today. Minus the Tequila of course. grin

The only thing about this healthy eating plan is that most of the stuff I cook I could easily eat second helpings, but I'm having to show some restraint. Working out even makes it worse because it makes me even more hungrier. I'm eating about 2300 calories a day or under and I am hungry all the time. Right after I finish eating I'm hungry.

We should. I've been tossing the idea around in my head for a while now how a bunch of us could get together for a cook-off type thing. Burgers, or gumbo or chili or something like that. Everybody brings something, beers, drinks, etc...
