A buddy at work, one of those guys that is kind of a young millennial, adventure oriented kind of guy. The kind of guy who sleeps in hammocks. Anyway we were talking about food in the break room and he was describing this method of cooking a beef tenderloin encased in salt (we're talking a lot of salt) and wrapped in a wet towel and cooked directly on the coals in a fire. http://www.seriouseats.com/recipes/2015/...oin-recipe.html It sounds delicious. I think I'm going to do it at the cabin, along with a nice spring salad and some foil wrapped potatoes cooked on the coals as well. Maybe serve the meat with a horseradish sauce... Think I should try it?

I have cooked a ribeye using what i refer to as the "caveman" method by cooking directly on the coals, but never tried the salt and towel technique. Tenderloin is a pricey risk. But its your money, let me know how it goes and i might try it.

I'm with muzziehead on the cost of the beef. I wonder if you would work with a pork tenderloin for a test run being they are cheaper? I think it will work. If you have a temperature probe stuck into it and pull it off when it's about 100 degrees and let it rest until it's about 120 degrees, well... your cooking to temperature, how could you screw it up?

Sounds good. High risk/high reward venture. The IGA in Ft. Payne supposedly has them for $6.99 a pound. May try it with one of those.
