Yeah, smoke to an internal of 150.

I found a 10lb pork belly at costco. It’s in the fridge curing right now. It should be ready for the smoke next weekend. Has to cure for 10 days.

I follow several cooking sites on Facebook. Since I have a Kamado Joe I follow their site. The link I posted is the method I’m following for the first go round. It comes highly touted and recommended. I may change up the seasonings and experiment on the next cook.

Dang did you use any wood for the smoke or just the lump coal? What was your overall cook time?

I used chunks of apple wood for the smoke. Cook time was around 3.5 hrs. I was constantly checking the internal temp once it got close. I didn’t want to overlook it. Turned out perfect. I need to do another. I’ve given over half of it away as gifts. smile.
