I had 2 pigs processed earlier this year. The place I used this time did a good job on the cuts, but they do not do what I would call "finishing" the Bacon. Therefore, I have a lot of packs of "bacon" that is just in chunks probably 1-2 pounds per chunk. What is the best way to flavor, smoke, slice this and how far ahead can I do it? Could I do a big batch and re freeze it until we needed it or do I need to do 1 at a time?

Try making bacon burnt ends, like you would with a brisket point. Rub the bacon chunk like you would a slab of ribs and smoke over low heat for a few hours. Pull and cube the meat. Put cubes in an aluminum pan and put your favorite bbq sauce on the chunks. Return to smoker to set your sauce on the chunks. Warning: addictive and probably not the healthiest choice but they are really good.

I have had pork belly that was cut into about 1" cubes and prepared at restaurants that was out of this world.

Go on Youtube and look up "Kamado Joe - smoked bacon". Good step by step on how to make your own back.

Where can you get pork belly around Birmingham? I want to make some of my own bacon as well.
