I started out by seasoning the pork tenderloin and then browning it in the skillet: Salt Pepper Chili powder Cumin Garlic powder Peanut oil for browning I cut up a few sweet potatoes, a sweet onion, some celery, baby carrots and a couple of tart crisp apples. I put everything except the apples in a big ziploc bag and added: Salt Pepper Peanut oil Apple cider vinager I put the apples in a separate bag and squeezed a half a lemon over them. After browning the pork loin I deglazed the pan with a little Shiraz I had in the bottom of a bottle and placed a sprig of rosemary and a sprig oregano under each loin. Then I poured all the veggies in there and tossed the whole skillet in the oven at 350 for about 40 minutes. At about 40 minutes I pulled it out put in the apples and drizzled about a 1/4 cup of local honey over the whole thing and tossed all the veggies and the apples up pretty good and put it back in the oven for about 20 minutes more. When it was done, I pulled it out, set the roasts aside to res for about 5 minutes and poured off the juices out of the skillet and into a small sauce pan. I added some corn starch to tighten it up and make a nice sauce. We served it up with Mrs. Irish's broccoli salad and let me tell you it was as good as it looks. A great fall meal for a Thursday night.
