I had 2 pigs processed earlier this year. The place I used this time did a good job on the cuts, but they do not do what I would call "finishing" the Bacon. Therefore, I have a lot of packs of "bacon" that is just in chunks probably 1-2 pounds per chunk. What is the best way to flavor, smoke, slice this and how far ahead can I do it? Could I do a big batch and re freeze it until we needed it or do I need to do 1 at a time?
