Hey brother, need your input. We did a couple of pork tenderloins tonight that cooked past the optimal doneness...not burned, but definitely too dry. I'm not one to waste food, so do you have any recommendations to salvage the leftovers? I chopped it up into small chunks and keeping it in the juice that it cooked in. I'm thinking possibly pork fried rice? Maybe a soup? What say ye?

I ain't Irish, but yeah you're going to need to put it in something like a soup or pork fried rice. You can also chop it up into thin slices and slather with BBQ sauce for sandwiches or BBQ tacos.

I was going to say pork fried rice.

Have a few cups of rice already cooked and cold.
Dice up an onion and celery
Julianne some carrots
Grab a handful of frozen corn and frozen English peas
Chopped garlic
Soy sauce
Sesame oil
Peanut oil

Get your wok going nice and hot with a generous amount of peanut oil and toss in your diced up pork until they start to sear a little on the out side tossing continuously. Then throw in the onions, carrots, and celery and let them go just until they start to cook a little still tossing everything around. You don't want them mushy. Throw in the garlic, some salt and pepper. Then the corn and peas. Keep tossing. Then add the soy and the drizzle of the sesame oil. Lastly put in the cold rice and keep tossing and at this point I usually add in some more soy. Keep tossing everything until the rice gets hot too and you are ready to serve.

Oh.... Damn... I for got about the scrambled egg. Scramble an egg and throw it in there and stir it around after the vegetables and before the garlic and stuff.

Totally agree with Irish...good luck with it. Sucks when you overcook a good piece of meat but it happens to the best of us occasionally!!
